Abstract:
The present work was designed to demonstrate the molecular species and lipids composition of phospholipid in different parts of the large yellow croaker( Pseudosciaena crocea). The large yellow croaker was dissected as head,belly flap,dorsal muscle,viscera,tail and roe. The phospholipid components and fatty acid composition were determined. The results showed that the roe phospholipid content was most( 5.50 g /100 g),the phospholipid components of the head,belly flap and dorsal muscle were consistent,including lyphosphatidylcholine( LPC) and phosphatidylcholine( PC).The content of LPC and PC from head phospholipid was 39.23%,45.12%,respectively.The content of LPC and PC from belly flap was 62.74%,36.12%.The content of LPC and PC from dorsal muscle was 66.69%,33.31%. The visceral phospholipids include LPC,phosphatidylinositol( PI) and sphigomyeline( SM). The content was 59.37%,12.77% and 29.83%,respectively. The tail phospholipids include LPC,PC and phosphatidyl ethanolamine( PE). The content was 21.41%,59.37% and 19.22%,respectively. The roe phospholipids include LPC,PI,PE and PC.The content was 12.30%,1.09%,9.12% and 76.36%,respectively. The fatty acids composition analysis showed that all of the different parts from the large yellow croaker were rich in polyunsaturated fatty acids( PUFAs),especially in the large yellow croaker roe( 43.1%).This work illustrated that the large yellow croaker is one of the marine fish containing high content of phospholipid.
