食源性蛋白质自组装及其应用

Self-assembly of foodborne protein and their applications

  • 摘要: 天然、无毒、可降解及较好的生物相容性,使得基于食源性蛋白质自组装体系在食品及材料领域占据越来越重要的地位。本文介绍了常见的蛋白质自组装形式,包括常见蛋白质的自组装、蛋白质-蛋白质自组装、蛋白质-多糖自组装、蛋白质糖基化自组装及蛋白质-无机材料自组装形式,并简介了蛋白质自组装的应用。 

     

    Abstract: Protein self- assembly plays a much more important role in food and material field due to its natural advantage,nontoxic,better biodegradable and good biocompatibility.In this paper,we introduced several common protein self- assembly forms,including common protein self- assembly,protein- protein self- assembly,protein- polysaccharide self- assembly,protein glycosylation self- assembly,and protein inorganic self- assembly nanometer materials.Finally,the application of the protein self- assembly was briefly introduced.
