Abstract:
Beta- carotene has various beneficial biological activities to human,but its poor physicochemical properties and solubility will lead to the low bioavailability,which can greatly limit the application of beta- carotene in the food industry. In recent years,in order to improve its poor physicochemical properties,solubility and bioavailability,more and more researches are carried out for the food- grade delivery systems in different encapsulating technology loading beta- carotene.As a result,the research and development of these food- grade delivery systems can widen the range of the application of beta- carotene.In this article,the characteristics of the loaded beta- carotene and the existing problem about the food- grade delivery systems in recent years were summarized,aiming to provide certain theory reference for developing the better food- grade delivery systems and improving the stability and bioavailability of beta- carotene.
