微波辐射对小麦种子微观结构的影响

Influence of microwave radiation on wheat seed microstructure

  • 摘要: 为探究微波辐射对小麦种子微观结构的影响,采用扫描电镜观察小麦种子微波辐射前后胚乳微观结构,采用透射电镜观察小麦胚细胞结构变化,并测定小麦磨粉后破损淀粉的含量。结果表明,小麦种胚细胞对微波辐射敏感,700W辐射30s就会破坏种胚细胞的功能代谢,改变原有的细胞结构。而700W,40~50 s的微波辐射也会使胚乳淀粉粒发生形变甚至破裂,热损伤导致破损淀粉含量增加。 

     

    Abstract: Endosperm and germ microstructures of wheat seeds treated by microwave were observed by scanning electron microscope and transmission electron microscope,respectively.The effects of microwave radiation on the microstructures of the wheat seeds were investigated.The damaged starch contents were also measured.Results showed that germ cell was sensitive to microwave that 700 W,30s were enough to change the germ cell structure and cause metabolic disorders.700W,40~50s of microwave radiation would cause deformation and fracture of endosperm starch granules. Meanwhile,damaged starch content increased with temperature increased.
