核磁共振技术在酒的质量检测中的应用

Application of nuclear magnetic resonance technology in alcohol quality detection

  • 摘要: 核磁共振检测技术(Nuclear Magnetic Resonance,NMR)是一种无损检测技术,在食品领域应用越来越多。本研究从产地溯源、年份和掺假鉴别三个方面综述了国内外核磁共振技术在酒的质量鉴定中的研究进展。核磁共振检测技术利用同位素示踪和成分分析来进行产地溯源;利用代谢物和氢键缔合状态分析来进行年份鉴别;利用全成分分析来进行掺假鉴别。但是核磁共振技术在酒的质量鉴定中还存在着信号重峰,没有比对数据库,设备昂贵等问题,需要改进以求更好的推广该技术的应用。 

     

    Abstract: Nuclear Magnetic Resonance( NMR) technology is a kind of inspecting technology and is currently widely used in food detection.The application of the NMR in alcohol quality detection were reviewed from three aspects:geographical origin traceability,vintage and adulteration identification.Isotopic trace and component analysis were utilized by NMR for geographical origin traceability. Metabolites and hydrogen bonding structures analysis were utilized by NMR for vintage identification. Ingredient analysis was used by NMR for identification adulterated.Meanwhile some problems like signals overlap,lack of database and expensive of equipment price in NMR still exist and should be resolved.
