鲜切果蔬次生代谢产物合成的研究进展

The research progress in synthesis of secondary metabolites in fresh- cut fruit and vegetable

  • 摘要: 果蔬组织在切割后产生次生代谢物形成愈伤组织,同时也发生乙烯生理效应,致使组织本身的代谢增强,呼吸速率增加,从而加速组织解体与衰老。次生代谢物还会引起酶催化反应和脂膜代谢,导致果实软化。本文主要介绍了由鲜切果蔬的次生代谢产物所引发的愈伤组织形成、呼吸代谢及酶促褐变、脂膜代谢等反应,同时对鲜切果蔬次生代谢中存在的问题进行了归纳,对鲜切果蔬未来发展前景进行展望,为鲜切果蔬的研究提供一定的理论依据。 

     

    Abstract: After cutting organizations form callus produce secondary metabolites,meanwhile it happens physiological effects of ethylene,causes the enhancement of metabolism,increases breathing rate,so as to speed up the dissolution of the organization and aging. Secondary metabolism will cause enzymatic reactions and lipid metabolism,resulting in fruit softening. This paper described the fresh- cut fruit and vegetable callus formation,secondary metabolite synthesis,respiration and enzymatic browning,lipid metabolism,and the physiological and biochemical reactions that occur in the fresh- cut fruits and vegetables in the problems and prospects discussed,and it provided a theoretical basis for the study.
