Abstract:
Detection of epitopes in gluten related to celiac disease can evaluate the sensitivity of wheat variety resources and the relevant food,and it is a strong technical support for the safety consumption for celiac disease patients.The main methods used in the detection of epitopes related to celiac disease in wheat gluten involve three approaches based on western blotting,next- generation sequencing,LC- MRM / MS,respectively.The advantages and disadvantages of these methods were introduced in detail.Among them,western blotting could present direct results,while the quantitative accuracy was not high.The accuracy of next- generation sequencing is relatively high,while the range of application is narrow with a complicated data processing.LC- MRM / MS has advantages on high sensitivity,low sample consumption and fast analysis speed with higher cost.
