BBD响应面法优化食盐、明矾溶液对柿子脱涩工艺的研究

Optimization of salt,alum solution on persimmon deastringency process by BBD response surface methodology

  • 摘要: 目的:采用食盐、明矾溶液浸泡柿果,优化柿子的脱涩工艺。方法:采用Box-Behnken设计方法,研究食盐与明矾质量比、脱涩温度、脱涩时间3个因素及其交互作用对柿子单宁含量、硬度的影响。结果:不同因素对可溶性单宁含量和硬度的影响程度顺序为:食盐、明矾质量比>脱涩温度>脱涩时间;优化得到最佳的脱涩条件为:食盐、明矾质量比3∶1,脱涩温度33.7℃,脱涩时间为24 h;在此条件下,可溶性单宁含量降到0.1430%,硬度为0.3719 MPa。结论:本研究优化了柿子脱涩工艺,提高了脱涩效率,准确可靠,适用于柿子的脱涩处理。 

     

    Abstract: Objective: The persimmon deastringency process was optimized by using salt,alum solution soaking persimmon fruit.Methods: The effects of the mass ratio of salt and alum,astringent temperature,astringent time on the soluble tannin content and hardness of the persimmon were investigated by Box- behnken using design methods.Results: The order of the influence of the three factors on the soluble tannin content and hardness was alum mass ratio > astringent temperature > astringent time,and the optimized conditions was salt,alum mass ratio of 3∶ 1,astringent temperature was 33.7 ℃,astringent time of 24 h.According to model predictions,soluble tannin content was reduced to 0.1430%,the hardness was 0.3719 MPa.Conclusion: The study showed that the persimmon deastringency process was optimized,deastringency efficiency was improved,which was accurate and reliable,suitable for processing astringent persimmon.
