Abstract:
This research aimed at optimizing the hydrolyzation conditions of Sinonovacula constricta by neutral protease to prepare polypeptides.On the basis of single factor experiment,the orthogonal experiment was established and the yield of peptides was investigated to evaluate the effect of enzyme hydrolation.The optimal hydrolytic conditions could be concluded as follows: p H7,the dosage of neutral protease was 1200 U / g,the solid-liquid ratio was 1 ∶ 2.5( m ∶ V),the hydrolysis temperature was 40 ℃ and the hydrolysis time was 2 h.Under the optimal hydrolytic conditions,the yield of polypeptides was up to( 79.2 ± 0.7) mg / g.
