我国苦荞资源的开发利用研究进展

Research progress in development and utilization of tartary buckwheat resource in China

  • 摘要: 苦荞麦(tartary buckwheat)是我国传统的小杂粮之一,含有丰富的营养及较多的芦丁、槲皮素等黄酮类物质,是中国占有绝对优势的一种杂粮资源。面对国内外市场对苦荞麦及其制品需求的日益增大,我国的苦荞产业面临着诸多的机遇与挑战,急需对其进行系统的开发和利用,提高其附加价值,加快产业化开发进程,使我国苦荞产业健康良好发展。本文对苦荞的营养价值、产品深加工及产业化研究进展进行综述,对苦荞产业未来的发展提出了建议与展望。 

     

    Abstract: Tartary buckwheat, one of the traditional minor crops, which is abundant in nutrition and flavonoids such as rutin and quercetin, plays a dominant role in china. With increasing demands from domestic and international markets, the tartary buckwheat industry in china is faced with many opportunities and challenges.In order to make a healthy and sound development of the industry in our country, there is an urgent need of a systematic development and utilization, an improvement of the added value, and an acceleration of the process of industrialization development. This article reviewed the previous studies on tartary buckwheat nutritional value and further processing products and industrialization, and made some suggestions and prospects on the future development of tartary buckwheat industry.
