水产品加工废弃物中的蛋白及生物活性肽的研究进展

Research progress in protein and biological active peptides from the wastes of aquatic products processing

  • 摘要: 为合理利用水产品加工过程中产生的废弃物,本文以鱼类、贝类、水产软体动物为例,综述了废弃物中蛋白利用的研究现状,详细阐述了多种生物活性肽的功能特性,包括降血压、抗氧化应激、抑菌、螯合钙、减肥等功能,并对水产品加工废弃物的商业前景进行展望,旨在为功能肽的研究和开发提供参考价值,同时提高水产废弃物的附加值。 

     

    Abstract: In order to make full use of residual wastes produced from aquatic products process, this paper reviewed the development status of protein using from residual wastes focused on fish, shell- fish and mollusk, stated the functions of various of biological active peptides including blood press reduction, anti- bacteria, chelated calcium, weight loss and so on, and prospected business outlook of aquatic products processing wastes, aimed to provide reference for function peptide research and development, as well as improved the added value of aquaculture wastes.
