苹果酸催化大豆异黄酮糖苷水解苷元的工艺研究

摘要: 目的:研究苹果酸催化大豆异黄酮糖苷水解苷元的最佳工艺条件。方法:以大豆异黄酮糖苷水解率为评价指标,采用单因素和正交实验法对水解的工艺条件进行优化。结果:确定苹果酸催化大豆异黄酮糖苷最佳水解工艺条件为:反应温度130℃,反应时间3.0h,苹果酸水溶液浓度2.0mol/L,水解率达到94.0%以上。结论:优选得到的糖苷水解生成苷元工艺简单易行,稳定性好。Abstract: Objective:The optimum conditions of soybean isoflavone glycoside hydrolyzed into isoflavone aglucon by malic acid catalysis were found. Method:The hydrolysis rate of soybean isoflavone aglucon was taken as evaluation index. The hydrolysis process conditions were optimized by single factor and orthogonal tests.Result:The optimum hydrolysis conditions of soybean isoflavone glycoside hydrolyzed into isoflavone aglucon by malic acid catalysis:reaction temperature was 130℃, reaction time was 3.0h, solution concentration of malic acid was 2.0mol/L, hydrolysis rate above 94.0%. Conclusion:This paper explored a simple and stable technologic way on soybean isoflavone glycoside hydrolyzed into isoflavone aglucon.
