辐照保鲜技术及其在双孢蘑菇保鲜中的应用

  • 摘要: 双孢蘑菇较短的货架期是阻碍其在市场流通的主要因素。辐照可延长双孢蘑菇的采后货架期。本文阐述了辐照保鲜技术及其在双孢蘑菇中的应用,探讨了辐照对双孢蘑菇感官品质、营养品质、货架期和微生物的影响,探讨了辐照食品的安全性,为双孢蘑菇辐照的进一步开发研究提供了参考。随着消费者对辐照食用菌安全性和品质认可程度的逐渐增大,辐照必将成为未来食用菌食品贮藏保鲜中具有广阔应用前景的技术。 

     

    Abstract: The short life of Agaricus bisporus is an obstacle to its distribution and marketing.Irradiations have been shown the potential ability in extending the postharvest shelf life of the fresh mushroom.This paper elaborated the food irradiation for mushroom.The effect of irradiation on the sensory quality, nutritional quality, shelf- life, microbiology and food safety were discussed as well.This paper present some sights for further application research and development.Irradiation will be commonly used in edible fungus preservation, as consumers are becoming more aware of the role of food irradiation in regards to food safety and product shelf-life extension.
