乳清生物技术处理研究进展

Research progress of biological treatment of whey

  • 摘要: 乳清是干酪生产过程中的副产物,其中含有牛奶中主要的乳清蛋白和乳糖等水溶性有机物。对于生产奶酪的中小企业来说,由于技术和设备的缺乏,不能对乳清深加工转化成有经济价值的产物,而只能将乳清作为废水排放,造成优质资源的浪费。生物法作为当今最为有效的废弃物转化技术之一,在废弃生物质的转化过程起到关键作用。本文就国外在乳清生物技术处理的研究进展进行综述,这其中主要的生物技术包括:发酵产甲烷、乙醇、氢气、乳酸以及乳糖酶水解等技术,为国内乳品行业的发展提供参考。 

     

    Abstract: Whey is a by-product in the process of cheese production which contains major whey proteins, lactose and some other water-soluble ingredients in milk.For many small cheese enterprises that can't take advantage of whey, wastewater is the only way to treat.Biotechnology is one of most effective conversion technology for waste, played a key role in the process of biomass conversion.The article summarized the progress of biological treatment of whey in order to provide reference for domestic dairy industry.The main biological technologies include fermentation to methane, ethanol, hydrogen, lactic acid and enzymolysis of lactose.
