南极磷虾抗氧化多肽制备的研究

  • 摘要: 以清除超氧阴离子自由基、DPPH自由基和羟基自由基能力为指标,筛选制备南极磷虾抗氧化多肽的水解条件,得到高效的抗氧化多肽制品。结果表明:胰蛋白酶、中性蛋白酶复合,酶解南极磷虾6h后得多肽的抗氧化能力最强,超氧阴离子自由基的清除率达到11.5%,DPPH自由基的清除率达到72.7%,羟基自由基的清除率达到84.8%。经超滤分离,分子量范围在510ku的多肽表现出较强的清除三种自由基的能力。对其进行tricine-SDS-PAGE电泳,结果显示电泳图谱上出现了两个条带。 

     

    Abstract: In the study, the free radical scavenging ability against superoxide, DPPH and hydroxyl radical was investigated to screen optimum hydrolysis conditions for preparing Antarctic krill peptides with high anti- oxidant activity.Results indicated that peptides prepared by trypsin and neutral protease for 6h, showed the highest anti- oxidant activity, with free radical scavenging effect on superoxide, DPPH and hydroxyl radical by 11.5%, 72.7% and 84.8%, respectively.Through ultra- filtration, peptides ( 5 ~ 10ku) exhibited stronger scavenging activity against free radicals, which further revealed with two bands in the tricine-SDS-PAGE electrophoretogram.
