新选308与铁观音乌龙茶香气成分比较分析

Comparison of aroma constituents between New Strains 308 and Tieguanyin Tea

  • 摘要: 选用新选308和铁观音为研究对象,采用顶空-固相微萃取(HS-SPME)法富集其香气物质和GC-MS进行香气成分分析。结果表明:新选308的酯类组分(13.35%)、酮类组分(7.98%)和烯烃类(35.97%)比铁观音乌龙茶香气高,其他组分包括醇类、醛类、烷烃类、杂氧化合物、含氮化合物等均比铁观音低。新选308的主要香气成分是橙花叔醇(19.25%)、α-法呢烯(16.17%)、吲哚(13.1%)、反-β-罗勒烯(6.42%)、2-甲基-6-亚甲基-1,7-辛二烯-3-酮(4.39%)、己酸叶醇酯(3.8%)、α-香柑油烯(3.3%)、顺-茉莉酮(2.03%)、壬醛(1.94%)、苯乙醛(1.28%)、苯乙腈(1.24%)、己酸己酯(1.22%)、水杨酸甲酯(0.92%)等;通过对其感官审评比较,发现两种茶的感官评分相近,但两品种(系)所制乌龙茶呈现各自的品种香型,新选308所制乌龙茶香气似茉莉花香,而铁观音音韵显。 

     

    Abstract: The aroma constituents of New Strains 308 and Tieguanyin tea were determined by HS-SPME/GC- MS.Results showed that there were many differences in aroma constitutes between oriental-beauty tea and Tieguanyin tea.The aromatic compounds of New Strains 308 were much richer than those of Tieguanyin tea, and the contents of ketones, Esters and Olefinsare higher but the contents of Alcohols, Aldehydes, Alkanesand Nitrogenous compounds were lower than those of Tieguanyin tea.The major aromatic compounds of New Strains 308 were nerolidol ( 19.25%) , α- Farnesene ( 16.17%) , Indole ( 13.1%) trans- β- ociene ( 6.42%) , 1, 7- Octadien- 3- one, 2-methy-l6- methylene- ( 4.39%) , Hexanoic acid, 3- hexenyl ester, ( Z) - ( 3.8%) , α-- Bergamotene ( 3.3%) , cisJasmone ( 2.03%) , Nonanal ( 1.94%) , Benzeneacetaldehyde ( 1.28%) , Benzyl nitrile ( 1.24%) , Hexanoic acid, hexyl ester ( 1.22%) , Methyl salicylate ( 0.92%) and so on.By sensory evaluation, we found that the score of New Strains308 were the same as Tieguanyin tea.However they had different aroma types, the Tieguanyin tea had the guanyin-flavor while the New Strains 308 tea had the jasmine-flavor.
