Abstract:
Hyaluronic acid is a biodegradable, biocompatible, conserved, non-immunogenic and non-inflammatory linear polysaccharide, which has been widely used not only in food, medicine, but also in cosmetics.This paper discussed the basic characteristics of the hyaluronic acid which was extracted from aquatic organisms as well as the extraction and purification methods, so that it can provide a theoretical basis for its utilization in the food and pharmaceutical industry, and aquatic hyaluronic acid further application was prospected.
