壳聚糖涂膜处理对紫金春甜桔采后保鲜效果的影响

  • 摘要: 研究壳聚糖涂膜处理对紫金春甜桔采后的保鲜效果,测定贮存过程中感官品质和理化指标的变化情况。结果表明:室温贮存54d内,适宜浓度的壳聚糖涂膜处理可有效减缓果实中水分的散失,促进春甜桔总糖的积累,减缓果实中可滴定酸和VC的降解。其中以1.0%浓度壳聚糖涂膜处理保鲜效果最好,贮藏54d能较好地保持果实原有的风味。 

     

    Abstract: The Zijin sweet orange were put in room temperature treated by chitosan-coating, and the changes of sensory quality, physical and chemical indicators were investigated.The results showed that with the proper concentration of chitosan-coating treatment, it could minimize water loss and rotten fruit, alleviate the decline of titratable acidity, total soluble sugar and VC content.All these showed that 1.0% chitosan-coating concentration treatment had the best storage quality of Zijin sweet orange, to the 54d, the local flavor and the original colour were retained.
