Abstract:
The Zijin sweet orange were put in room temperature treated by chitosan-coating, and the changes of sensory quality, physical and chemical indicators were investigated.The results showed that with the proper concentration of chitosan-coating treatment, it could minimize water loss and rotten fruit, alleviate the decline of titratable acidity, total soluble sugar and VC content.All these showed that 1.0% chitosan-coating concentration treatment had the best storage quality of Zijin sweet orange, to the 54d, the local flavor and the original colour were retained.
