植物甾醇与胆固醇对脂质体膜性质的影响

  • 摘要: 胆固醇作为膜结构调节剂已广泛被人们研究,植物甾醇的结构与胆固醇相似,并且可以抑制胆固醇的肠道吸收。用植物甾醇替代胆固醇,既能调节脂质体膜的结构性质,又可以避免胆固醇的负面效应。以大豆卵磷脂为原料,研究不同的甾醇对脂质体粒径、抗氧化性、膜微极性、膜流动性的影响,结果表明,胆固醇对脂质体膜流动性的调节作用较强,而加入β-谷甾醇,大豆植物甾醇的脂质体更加稳定,豆甾醇对膜结构的调节作用相对较弱,因此可以用β-谷甾醇,大豆植物甾醇替代胆固醇。 

     

    Abstract: As a membrane structure modifier, cholesterol has been studied widely.The plant sterols have similar structure with cholesterol, and it is clearly demonstrated that plant sterols can reduce the rate of intestinal cholesterol absorption.The replacement of cholesterol by plant sterols not only modulates membrane structure, but also prevents the negative effect of cholesterol.The aim of this work was to compare the influence of both plant sterols and cholesterol by comparing the particle size, antioxidant, micro-polarity, fluidity of bilayer.It was found that cholesterol played a stronger regulatory role in the liposome membrane fluidity, but the addition of β-sitosterol and soybean phytosterols more strongly influenced the membrane stability.However, stigmasterol could not participate in the effective control of membrane.Taken together, the cholesterol could be replaced by β-sitosterol or soybean phytosterols.
