Abstract:
In order to evaluate the antioxidant activities of melanin in Aureobasidium pullulans, reaction systems of reducing force, DPPH free radicals, hydroxyl free radicals, super oxide anion free radicals, iron chela force as well as inhibition of lipid peroxidation were established. Then antioxidant activities of melanin of Aureobasidium pullulans and VC were measured and compared in different reaction systems. The result indicated that melanin had certain reductive force, in 0.4g/L was equal to the VC. Melanin could effectively scavenge DPPH free radicals, hydroxyl free radicals and super oxide anion free radicals. Under the condition of the same concentration, melanin remove hydroxyl free radicals and super oxide anion free radicals were higher than VC. In addition, melanin had certain iron ion chelated force and suppress the lipid peroxidation ability. So, melanin in Aureobasidium pullulans had good antioxidant activities.
