超声辅助生鲜果蔬采后安全保障的研究进展

Progress of ultrasound-assisted security of postharvest fruits and vegetables

  • 摘要: 人们对天然、营养等观念的推崇,导致生鲜果蔬的消费量日渐增加。为确保生鲜果蔬采后的安全性,目前超声波作为一种物理的辅助手段逐渐受到重视。本文从超声辅助果蔬安全保障的机理入手,就超声在关乎果蔬流通安全的病原菌、病毒、农残、清洁度等方面的作用进行了综述,最后对超声技术在果蔬采后处理上的应用前景进行了展望。 

     

    Abstract: The consumption of fresh fruits and vegetables is increasing. In order to ensure the safety of postharvest fruits and vegetables, researchers paid more attention to the ultrasound. The mechanism of ultrasounic technology applying in fruits and vegetables was introduced. Then the effects of ultrasound on the pathogenic bacteria, viruses, pesticide residues and cleanliness were summarized. Finally, the prospect of ultrasonic technology in fruits and vegetables was forecast.
