Abstract:
When oxidized, the structure, physical, chemical and functional properties of protein can be changed.Food protein oxidation is common in its processing and storage.The impact of protein oxidation on the redox state of the body has caused more and more attention.The article aim was to discuss the mechanism of protein oxidation, the main changes in proteins after the oxidation and the potential effect of oxidized protein intake on cells, digestion in vivo and vitro and the redox state of the body in order to further the exploration of oxidated protein absorption mechanism and its effect on the organism.
