环糊精葡萄糖基转移酶的生产及其在食品工业中的应用

Production of Cyclodextrin glucanotransferases and their applications in food industry

  • 摘要: 环糊精葡萄糖基转移酶(CGTase,EC2.4.1.19)为食品工业中的重要酶,在生产中多用芽孢杆菌通过液体深层发酵获得。CGTase主要用途为生产环糊精;环糊精在食品工业中有广泛应用。CGTase还可以通过转糖基反应对食品添加剂和功能性成分如甜菊苷,芦丁和抗坏血酸等进行酶法改性。此外,CGTase用于面包烘焙,可以改善成品面包的品质,延迟面包老化等。 

     

    Abstract: Cyclodextrin glucanotransferases (CGTases, EC 2.4.1.19) are important enzymes of food industry, which are obtained through liquid fermentation. In food industry, CGTases widely applied in food industries that are mainly utilized to produce cyclodextrins from starch. In addition, CGTases can be used through transglycosylation to improve properties of food additives and functional components such as stevioside, rutin and L-ascorbic acid. Furthermore, it can also be applied in bread baking industry to improve the quality of bread and retard the staling process of bread.
