Abstract:
Cyclodextrin glucanotransferases (CGTases, EC 2.4.1.19) are important enzymes of food industry, which are obtained through liquid fermentation. In food industry, CGTases widely applied in food industries that are mainly utilized to produce cyclodextrins from starch. In addition, CGTases can be used through transglycosylation to improve properties of food additives and functional components such as stevioside, rutin and L-ascorbic acid. Furthermore, it can also be applied in bread baking industry to improve the quality of bread and retard the staling process of bread.
