  • In this study,the detection of adulteration in beef roll was performed using a PEN3 electronic nose system. To detect differernt adulterated samples,analytical methods involving principal component analysis and linear discriminant analysis were used. The results showed that the electronic nose could stably reflect the changes in the volatile matter information in the beef rolls mixed with different proportions of pork and ducks and could separate the meat samples with different proportions.
