Preservation Effect of Modified Atmosphere Storage in Refrigerator on Fruits Preservation

  • To study the preservation effect of fruits in refrigerator of modified atmosphere storage,four kinds of fruit like cherries,strawberries,red delicious apple and blueberries were refrigerated seven days in control refrigerator(21% O2)or modified atmosphere refrigerator(18~18.5% O2). The weightlessness rate,vitamin C and anthocyanin contents and fruit surface cells morphology were determined to evaluate the preservation effect of modified atmosphere refrigerator. The results indicated that four kinds of fruits stored in modified atmosphere refrigerator had the best preservation effect,which significantly reduced weight loss rate,improved the retention rate of vitamin C and anthocyanin,and improved the apparent morphology,slowed down the deterioration of the sensory quality of fruits,maintained the freshness of fruits,and maintained the epidermal cell morphology well of fruits. Therefore,the modified atmosphere storage in refrigerator would be more conducive to the preservation of fruits.
