  • Prunus humilis is a new health fruit for calcium supplementation, which is bred according to the unique wild shrub tree species in China. Its fruit has unique rich aroma and high nutritional value. Because of its high content of calcium, it is called calcium fruit, which is very suitable for processing into various products. In recent years, it has become a hot spot in research and utilization, and has a very broad application prospect in food, nutrition, health care, medical care and other fields. However, there is no industrialization development at present, and the processed products are relatively single and limited. In this study, the deep processing products developed by Prunus humilis in recent years were summarized, the existing problems in current research were analyzed, and the solutions were proposed and further prospects was made, in order to provide theoretical basis for the development of new Prunus humilis deep processing products.
