Effect of Curcumin-Mediated Photodynamic Treatment(PDT) on Lipid Degradation-related Enzymes in Oysters

  • In this paper,the effects of curcumin-mediated photodynamic treatment(PDT)on lipid degradation-related enzymes in oysters were investigated,aimed to elucidate the mechanism of curcumin-mediated PDT delaying lipids oxidative and hydrolysis from the perspective of enzymes. By detecting the activity of endogenous enzymes,selecting the strains secreted enzyme,identifying strain used 16S rDNA,analyzing enzyme-producing strains used Illumina MiSeq high-throughput sequencing technology in fresh oysters. The results showed that curcumin-mediated PDT could reduce the activity of endogenous lipoxygenase(LOX),phospholipase A1(PLA1),phospholipase A2(PLA2),and phospholipase D(PLD). One strains secreted lipases(Pseudomonas),two strains secreted phospholipase C(Enterobacteriaceae and Stenotrophomonas)were selected. What’s more,curcumin-mediated PDT could reduce the number of those bacteria secreted enzyme(P<0.05),thus reducing the number of exogenous enzymes. Therefore,curcumin-mediated PDT could delay the oxidative and hydrolysis of lipids by reducing the activity of endogenous enzymes and the amount of exogenous enzymes in oysters.
