Determination of 13 Kinds of Heavy Metal Elements in Wheat Flours by Inductively Coupled Plasma Mass Spectrometry

  • To establish a method for simultaneous determination of 13 heavy metal elements in wheat flours,heavy metal contents were determined by inductively coupled plasma mass spectrometry using 4 kinds of wheat flour as materials. The samples were pretreated by microwave digestion. The results showed that the limits of detection were ranged from 0.022 to 0.670 μg/L and the correlation coefficient of standard curve in each element was greater than 0.9992 with well correlation. The recoveries ranged from 88.00% to 107.38%. The average detection values of aluminum,manganese,iron,cobalt,nickel,copper,zinc and selenium in the four samples ranged from 0.004 to 8.615 mg/kg. The values of silver,chromium and arsenic were 0.186,0.142 and 0.015 mg/kg,respectively,while cadmium and lead were not detected. The element contents detected in the unknown sample were all within the given range. This method with the characteristics of rapid detection,high sensitivity,better precision and accurate results could provide reference for the monitoring of heavy metal pollution in wheat flour.
