Advances in Extraction of Collagen and Its Peptides from Animal Tissues by Enzymatic Hydrolysis

  • Collagen is a kind of protein with the most abundant content and the most extensive coverage in all tissues and organs of mammals, which is closely related to the functions of biological tissues and organs. And collagen is hydrolyzed by protease to form collagen peptide. This paper summarizes the raw materials of enzymatic hydrolysis of collagen and the corresponding kinds of enzymes, enzyme-assisted technologies as well as the detective methods of product properties. As a result, this can provide theoretical basis for optimizing the extraction process of collagen and collagen peptide, and expanding the application of collagen market.
