Hypolipidemic Effects of Protein from Penaeus vannamei in Vitro

  • To investigate the hypolipidemic effect of Penaeus vannamei protein in vitro,the hypolipidemic characteristics of different precipitated components of Penaeus vannamei protein were studied by cholate adsorption capacity,inhibition rate of pancreatic lipase,hypolipidemic effect and cholesterol esterase reaction. The results showed that the protein content of Penaeus vannamei was 18.40%,and the proteins from different parts had very good adsorbability for cholate. The strongest adsorption capacity part was pH6 part for sodium taurocholate(91.3%),while pH6 part for sodium glycochlorate(75.1%),and pH4 for sodium deoxycholate(63%). The pH7 part had the highest inhibition rate of pancreatic lipase(76.8%). The highest part of cholesterol-lowering effect was pH9(83.9%)and the lowest part was pH7(67.3%). The inhibition rates of cholesterol esterase were different,the highest and the lowest are pH10(83%)and pH4(23%),respectively. The proteins from Penaeus vannamei have a certain effect on reducing cholesterol in vitro.
