Evaluation of Rigor Process of Mutton Stored at Ice-temperature Based on Fuzzy Mathematics and Electrical Impedance

  • The rigor and aging process of mutton stored at ice-temperature(-1±0.6)℃ were increased. The traditional methods used to evaluate rigor and aging process of mutton were slow,time-consuming,and harmful to human health by using chemicals. Therefore,establishing a new method for evaluating rigor and aging process of mutton stored at ice-temperature with simple operation,low cost and no chemical hazard,which could present the theoretical and data support of evaluating aging process of mutton for industrial production on line.Electrical impedance properties of mutton based on fuzzy mathematics were studied form 0.3 to 9 day after slaughter. The results showed that intracellular resistance(Ri)and extracellular resistance(Re)increased firstly then decreased greatly,and then decreased slightly as the storage time continued. The cytomembrane capacitive(Cm),tangent of dielectric loss(tan δ)and polarization coeffecient(k)exhibited a decreased trend throughout the ripening time. Analysis of variance showed rigor and aging process had significant influence on the electrical impedance properties(Ri,Re,Cm,tan δ,k)(P<0.01).Two kinds of mathematical model(over standard with weight,coefficient of variation)used to evaluate rigor and aging process of mutton was founded by utilizing the electrical impedance index and fuzzy comprehensive evaluation. Two kinds of model can accurately evaluate rigor and aging process by validation.These results proved that electrical impedance properties measurement combined with fuzzy matrix model was a new way for assessing rigor and aging process of mutton stored at ice-temperature.
