Progress of Lipidomics Technologies and Their Application in Aquatic Products

  • The subject of lipidomics was emerged following the development of proteomics and metabolomics. The lipidomics is a subject that studies the chemical structure,biological function and dynamic changes in the regulation of metabolism of different lipid molecules in organisms,and reveals the regulation mechanism of lipid metabolism in organisms. The research area of aquatic products is an important branch in the field of agriculture and food,and the lipidomics has gradually extended to the field of aquatic products. In fact,the study of aquatic products is an important branch in the field of agriculture and food,and the application of lipidomics undoubtedly provides more effective technical means for the research on the metabolism,processing,storage and nutrition of aquatic products,which injected new vitality into the discipline. With the development of lipid extraction methods and the innovation of analytical techniques,the lipidomics of aquatic products is becoming more and more mature. This paper discusses the current lipid extraction methods and several analytical techniques such as shotgun method,liquid chromatography-mass spectrometry,etc. and summarizes the development and application of lipidomics in the study of aquatic products from the aspects of processing and storage,nutrition and metabolic diseases and so on.
