Effect of Metallothionein Egg Hydrolysates on the Growth of Two Lactic Acid Bacteria in Vitro

  • Taking the pH, OD value and the total number of colonies during the growth of lactic acid bacteria as evaluation indicators,the effects of common eggs,metallothionein-containing eggs,ordinary egg hydrolysates and metallothionein-containing egg hydrolysates on Bifidobacterium animalis,Lactobacillus acidophilus and two kinds of bacteria mixture were studied. The results showed that the egg hydrolysate as a nitrogen source could promote the proliferation of Lactobacillus. By comparison,the best nitrogen source was the egg hydrolysate containing metallothionein,and the OD value of Bifidobacterium animalis,Lactobacillus acidophilus and mixed bacteria fermentation broth were 1.05,1.08 and 1.09 times of the common egg hydrolysates. The optimal addition amount of metallothiontein-containing egg hydrolysates in the fermentation broth of Bifidobacterium bifidum animalis,Lactobacillus acidophilus and two kinds of bacteria mixture were 2.0%,1.5% and 2.0%,respectively,and the number of viable bacteria were up to 7.50×109,3.21×109 and 2.33×1010 CFU/mL,respectively. This study would proviede guidance for the development of Lactobacillus fermentation metallothiontein egg peptide products.
