Research Progress on Speciation Analysis of Arsenic in Food by HPLC-ICP-MS

  • Arsenic exists widely in nature in various forms,and its toxicity varies from form to form. To avoid pose a threat to human health by exposuring to food,it is particularly important to analyze the forms of arsenic in food. High performance liquid chromatography series inductively coupled plasma mass spectrometry(HPLC-ICP-MS)is one of the more accurate methods commonly used in current elemental speciation analysis with the advantages of high sensitivity and selectivity. Application of HPLC-ICP-MS in the analysis of arsenic speciation in foods in recent years were summarized in detail to provide reference for the analysis of arsenic species in foods in the future.
