Research Progress of High Voltage Electric Field Technology in Food Processing

  • As an important non-heat treatment technology,high voltage electric field technology has a wide application prospect in food processing due to its high efficiency,low energy consumption,pollution-free and little impact on food quality. At present,this technology is mainly used in food sterilization,food material drying,food freezing and thawing,and extraction of bioactive substances in food material,etc. In this paper,the basic principles of high voltage electric field technology are sketched,and the influences of high voltage electric field on the components of food are analyzed,then the research progress and mechanism of this technology in food processing are summarized. Finally,its application prospect is forecasted. This review provides theoretical bases in promoting the application of the high voltage electric field technology in food processing.
