Advances in Extraction,Purification, Stability and Antioxidant Activity of Betacyanin

  • Betacyanin is widely found in many plants such as cockroach,polygonaceae,mirabilis,cactaceae,and compositae. Recently,antioxidation research and application of betacyanin has attracted much attention of researchers in domestic and overseas. This paper reviewed the structure of betacyanin and its research progress of the extraction and purification technology,stability and its antioxidation activity by directly scavenging free radicals,inhibiting lipid peroxidation,complexing metal ions,inhibiting the expression of oxidase and inflammatory factors,and activating the body's antioxidant system. It would provide reference and theory for the optimization of extraction and purification technology of betacyanin,and its antioxidant activity.
