Research Progress on Application of Surface Enhanced Raman Spectroscopy in Food Detection

  • Surface enhanced raman spectroscopy as a spectral analysis technique based on the molecules under test was adsorbed on certain specially treated,nanostructured metal surfaces with strong Raman scattering enhancement to characterize the molecular vibrational spectroscopy technology,had the advantages of simple operation,high sensitivity,in-situ sampling and non-destructive testing,so it was widely used in food quality safety detection.This paper reviews the research progress of SERS technology in the detection of drug residues,preservatives,pigments,sweeteners,and can also be used to combine with other disciplines such as chemometrics,quantum mechanics theory,optics to quantitatively and qualitatively study certain substances.A brief overview of SERS technology in the study of macromolecular conformation,as well as other aspects such as biotoxins,adulteration and adulteration are summarized.The SERS signal is relatively weak and is susceptible to interference from food matrix and fluorescence effects. Therefore,the integration of SERS technology with other separation technologies will be one of the key directions. SERS technology study the conversion products,metabolites,reactants and impurities of certain substances in food processing. It will also be one of the hotspots of SERS analysis,so SERS is a promising tool for food testing.
