Determination of Glycine Betaine in Aquatic Products by High Performance Liquid Chromatography

  • A method for quantitative determination of glycine betaine in aquatic products was developed by high performance liquid chromatography. In view of the hydrophilicity of glycine betaine,the BEH HILIC chromatographic column was selected for analysis,the optimized mobile phase was formed by using acetonitrile with water at 80:20,which was used for equal elution,and the content of glycine betaine was analyzed at the wavelength of 195 nm. The results showed that the method had good linearity in the range of 15~200 μg/mL concentration (R2=0.9999). The detection limit was 5.12 μg/mL,the quantitative limit was 12.00 μg/mL,the average recovery was 96.5%~97.7%,the relative standard deviation (RSD) was 1.0%~2.2%. The content of glycine betaine in swimming crab,prawn and clam was 0.435,1.685 and 4.384 mg/g,respectively. The relative standard deviation was 0.5%,0.5% and 1.8%,respectively. This method is simple,rapid,sensitive and reproducible. It is suitable for the quantitative detection of glycine betaine in aquatic products.
