Metabolites Profile Analysis of Fermented Milk with Lactobacillus plantarum P-8 Based on Ultra-performance Liquid Chromatography-quadrupole-time of Flight Mass Spectrometry(UPLC-Q-TOF-MS)

  • Metabolomics is a subject that studies variations or temporal variations of micromolecule metabolites generated by organisms due to exterior stimulus. Metabolites profile of Lactobacillus plantarum P-8 fermented milk was analyzed by ultra-performance liquid chromatography-quadrupole-time of flight mass spectrometry(UPLC-Q-TOF-MS)combined principal component analysis(PCA). The results showed that 152 metabolites were determined as the major compounds contributing to the discrimination of fermented milk. The differential metabolites were mainly 16 organic acids(succinic acid,citric acid and homo-cis-aconitate etc.)and 20 peptides(Thr-Val,Asn-Pro,Val-Asn,Asn-Thr,Asn-Leu,Trp-Ala and Try-Ser etc.),12 free amino acids(cysteine,leucine,lysine,arginine and tyrosine,etc.)and 8 nucleic acid metabolites(7H-purine,cytidine and pyrimidine,etc.). Therefore,metabolomic methods could be used to identify and analyze different metabolites in fermented milk,which could serve as potential biomarkers.
