Effects of Formula Feed Hoarding on the Taste Quality of Female Chinese Eriocheir sinensis

  • Taking female Chinese Eriocheir sinensis as the research object,the biological index,basic chemical composition,contents of free amino acids and taste nucleotides of Chinese Eriocheir sinensis before and after hoarding were determined,taste activity value(TAV)and equivalent umami concentration(EUC)were calculated,and compared with the female crab before hoarding the effect of hoarding on taste was explored by sensory analysis. The results showed that the body weight of the Chinese Eriocheir sinensis increased after feeding,the index of edible parts increased,and the survival rate was as high as 100%. The fat content in the body meat decreased after the hoarding,while the protein and moisture in the body meat,the protein,moisture and fat content in the hepatopancreas and gonads increased;Sensory results showed an increase in the umami and sweetness of the crab after the hoarding. The results of free amino acid showed that the total amount of free amino acids in the body meat of Chinese Eriocheir sinensis after being fed with formulated dites decreased,and the total amount of free amino acids in hepatopancreas and gonads increased. Among them,the sweet amino acid(SFA)in the body meat,the umami amino acids(UFA)and SFA in the hepatopancreas and gonads increased significantly(p<0.05),and the hoarding improved the umami and sweetness of the crab. The amino acids which greatly changed after the hoaring were glutamic acid,proline,glycine,serine,alanine and arginine,and the TAV value of the crab in the hepatopancreas and gonads after hoarding was significantly higher than that before the hoarding,the types of amino acids with TAV>1 increased and the TAV values were higher. The results of taste nucleotides showed that the total nucleotide and EUC values in the crab meat after feeding decreased,while the total nucleotide and EUC in the hepatopancreas and gonads increased significantly(p<0.05),and the umami taste of the crab changed significantly. Therefore,the female Chinese Eriocheir sinensis bred for one month after the formulated diets had a better taste.
