Research Progress of Rice Detoxification on Inorganic Arsenic Contamination

  • Inorganic arsenic, which is highly toxic, has many adverse effects on human health such as cardiovascular disease, cancers and so on. It is easier for arsenic to accumulate in rice compared to other grains, therefore reduction of inorganic arsenic in rice in order to lower the risks of arsenic exposure from rice consumption plays a significant role in human health. In this study, different methods and techniques for different processes from paddy rice to cooked rice abroad in favour of inorganic arsenic reduction in rice were discussed and reviewed. However, there was lack of relative researches in China. Therefore, convenient methods and techniques for inorganic arsenic removal in different types of Chinese rice need to be developed with more suitability of Chinese dietary habits.
