Research Progress of Stable Isotope Ratio Mass Spectrometry for Authenticity and Traceability in Honey

  • Honey is deeply loved by consumers for its rich nutritional value and excellent health care effect. However, with the increasing consumption of honey, adulteration and fraud phenomenon become more serious in the honey market. Therefore, the authenticity and traceability of honey become more urgent.In view of stable isotope technology, it has a good practical effect on the study of the authenticity and traceability of honey. The research progress of the stable isotope technology in authenticity, geographical origin and variety identification of honey was summarized, and the achievements and shortcomings of the stable isotope technique were analyzed in this review. The aim of this review is to provide reference for the authenticity and traceability of honey researcher.
