Research Progress of Plant-derived Transglutaminse

  • Plant-derived transglutaminase(TGase)is a protease in the plant that catalyzes the acyl transfer reaction between proteins that is widely found in plants. It has been proved that this enzyme possesses significant physicochemical properties and physiological functions in the plant. Combined with the latest research,this paper reviewed the distribution,property of TGase in the different plant tissue and organ and the function of this enzyme during the process of plant growth. In order to obtain plant-derived TGase for the further study on the application in the food,biomedicine and other fields,heterologous expression of plant TGase were summarized as well,and improvement method of this technology was discussed.
