Research Progress on the Special Type Milk Processing Technology

  • The special milk refers to livestock's milk except Holstein Cow,which has unique taste and nutritional value,and it can meet the special needs of consumers in different nationalities and regions. And the processing technology of the special milk is an important part of the dairy industry. This paper reviewed the research progress on the special type milk processing technology,such as yak milk,goat milk,horse milk,and so on,which will provide reference for the further development and utilization of the special milk,and with the aim of increasing the variety of dairy products and promoting the coordinated development of various breeds of milk processing in China.
