Application of Electronic Nose in Quality Detection of Animal Cooking Raw Materials

  • The electronic nose is a apparatus,which simulate human olfaction to analyze,recognize and examine complex gas and volatility,and develops better in food industries. This paper introduced the working principle and basic composition of electronic nose,summarized the research progress of electronic nose in the quality and safety detection of animal cooking ingredients,and prospected its application trend.
