Status of processing and preservation technology of breeding Pseudosciaena crocea

  • Pseudosciaena crocea is the main coastal economic fish in China. In recent years, with the rapid development of breeding technology of large yellow croaker, the production has been increasing year by year, which has become one of the highest species in China Sea cage aquaculture production of single species. It was reviewed the development and application status of Pseudosciaena crocea on preservation technology (including traditional cold storage, biological preservative combined with cold storage preservation, irradiation combined with cold storage preservation, ice temperature controlled atmosphere preservation, microfreeze preservation, frozen preservation technology), ultrahigh pressure treatment technology, processing technology (including the technology of ready-to-eat snack food processing, pickling, dry processing, smoked processing, wine lees pickling, high value of processing byproducts). In view of the existing problems, combined with industry and market demand, put forward the future of fresh and deep processing of large yellow croaker in the direction of development.
