Application research progress on loop-mediated isothermal amplification in food safety detection

  • Loop-mediated isothermal amplification (LAMP) is a novel nucleic acid amplification method developed in recent years. The nucleic acid amplification is performed ender isothermal conditions by a set of four specially designed primers and a DNA polymerase with strand displacement activity. Compared with the traditional nucleic acid detection technology (PCR and real-time fluorescence quantitative PCR), it has the advantages of easy operation, high specificity, sensitivity and visual interpretation. Nucleic acid detection is an important means of food safety detection. This review summarized the application research progresses mainly focused on food safety detection, including food microorganisms testing, genetically modified organisms testing, food allergens testing and food derived ingredients testing. In addition, the perspectives of LAMP in food detection were discussed for better and high volume testing in food safety detection.
