Anti-lipid peroxidation of pigment from jujube

In order to study the effects of anti-lipid peroxidation of jujube pigment,the anti-lipid peroxidation ability of jujube pigment were studied by using bean oil,linoleic acid,mouse liver homogenate and mouse erythrocyte lipid peroxidation system. The results showed that the anti-lipid peroxidation ability of jujube pigment was enhanced with the increase of the concentration of jujube pigment,and showed a good dose-effect relationship. Jujube pigment could significantly inhibit bean oil lipid peroxidation,the IC₅₀ was 0.96 mg/mL. It had good inhibition effect on the yolk lipoprotein peroxidation induced by Fe²⁺,linoleic acid peroxidation and linoleic acid peroxidation atalyzed by Fe²⁺,under the high concentration of jujube pigment,the inhibition rates were 45.30%±1.15%,59.92%±1.12% and 43.57%±1.59%,respectively. Jujube pigment had a certain inhibitory effects on the mice liver lipid peroxidation,but the inhibition of mice liver lipid peroxidation induced by H₂O₂ was relatively weak. Jujube pigment could significantly inhibit erythrocyte membrane lipid peroxidation induced by H₂O₂ and erythrocyte hemolysis induced by H₂O₂,the IC₅₀ were 1.25 and 0.82 mg/mL,respectively. The reseach showed that jujube pigment has a strong anti-lipid peroxidation capacity.
