Research progress on production and processing of chicken liver

  • Chicken liver is a kind of animal by-products with high nutrition and large yield.It will have high economic value for its deep processing.The yield, nutritive value and processing status of chicken livers were simply introduced, and the researches on comprehensive utilization of chicken liver protein were mainly focused in this article. Additionally, from the view of deep processing and utilization of chicken liver, the existing problems were also discussed. Finally, the future development direction for further processing chicken liver in our country was also prospected.This review would inspire other researchers and provide guidance and reference for the future utilization and research of chicken liver.
