Research progress in development and utilization of animal liver protein resources

  • Animal liver is a byproduct in the processing of meat products, meanwhile it is a nutrient-rich quality food protein source, but also a class of important functional proteins, therefore, animal liver resource utilization and economic value need to improve.Based on the research progress of liver protein in domestic and foreign animals in recent years, the extraction of animal liver protein, biological activity and application in food and other fields are reviewed.The paper aims to provide theoretical basis for the development and application of the deep development and application of animal liver.
